Sandaya's Commitment
from the fusion of food and culture.

01 Sandaya's celadon
Sandaya's celadon vessels that reflect the spirit of hospitality.
The rare porcelain called "Sanda celadon" welcomes customers in the restaurant at the main Sandaya-Honten.
Celadon is a type of pottery that originated in China over 1,200 years ago. Its beauty lies in its clear, blue-green glaze, which resembles the color of gemstones. It was introduced to Japan during the Heian period and was cherished by the people of that time.
Celadon began to be produced in Japan during the Edo period, with three main production areas: Sanda in Settsu, Seto in Owari, and Mikawachi in Hizen.
At one time, celadon was immensely popular in Japan, but by the early Shōwa period, its kilns had ceased operation. However, Shōji Hirooka, the founder of Sandaya-Honten, dedicated 15 years to reviving the art of celadon pottery.
The clear blue of Sanda celadon embodies the heart of Sandaya-Honten.
In Sandaya-Honten restaurant, the dishes that welcome guests are made of celadon.
Born in China 1,200 years ago, this legendary porcelain once took Japan by storm before fading into obscurity.
It was Shōji Hirooka, the founder of Sandaya-Honten, who reignited its flame.
The celadon that now brings peace to people's hearts can be seen as the result of his unwavering pursuit of an endless dream.

02 The founder's thoughts

Seeking dreams and tranquility…
The founder, Shōji Hirooka, often said, "A restaurant must satisfy not only the sense of taste but all five senses of its guests."
In a prosperous Japan, we realized through interactions with various forms of art that what customers truly seek is tranquility. Through our business practices, we established that Sandaya-Honten is not just part of the restaurant industry, but a cultural and artistic enterprise.
A meal should not only satisfy hunger but also fulfill the heart with dreams and tranquility.
Sandaya-Honten was founded with the desire to create a dining space infused with the spirit of art and culture.
03 Passion for ham
Delicious, carefully crafted ham is made using traditional methods.
Carefully selected premium pork loin is salted for an extended period and left to mature in refrigeration to ensure a uniform flavor.
While the degree of aging is based on data such as salt concentration, the final decision relies on years of experience and intuition.
The ham is dried in a smokehouse, then smoked and heated using natural cherry wood chips mixed with coffee beans.
The deep, rich flavor, crafted by skilled artisans, is a testament to relentless dedication—resulting in a taste that only true craftsmanship can achieve.
